  • 2 tablespoons olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon thyme
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Cook rice in boiling chicken broth with salt until tender; set aside.
  3. Sear seasoned chicken in olive oil until golden; remove from skillet.
  4. In the same skillet, melt butter and whisk in flour until golden; gradually add milk and broth to thicken.
  5. Stir in seasonings and cheeses until melted and smooth.
  6. Return chicken to skillet; simmer to heat through.
  7. Serve over fluffy rice garnished with parsley.
