  • 1 1/3 cups plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup icing sugar
  • 1/4 teaspoon vanilla essence for glaze
  • 1 tablespoon heavy cream
  • Milk to adjust to glaze consistency


Instructions

  1. In a bowl, combine chopped strawberries with white sugar, corn starch, and lemon juice. Let sit for 15 minutes.
  2. Cream softened unsalted butter with white sugar, brown sugar, and vanilla essence until fluffy. Mix in the egg, then gradually add flour, bicarbonate of soda, baking soda, and salt until just combined.
  3. Gently fold in the strawberry mixture into the dough.
  4. Preheat oven to 350°F (175°C). Scoop dough onto a lined baking sheet, leaving space between each cookie.
  5. Bake for 12-15 minutes or until edges are golden. Cool on wire racks.
  6. In a small bowl, whisk together icing sugar, vanilla essence, heavy cream, and milk until smooth. Adjust milk as necessary for desired consistency.
