  • 1.5 lbs boneless, skinless chicken breasts
  • 1 small red onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 small head broccoli
  • 1 (20 oz) can pineapple chunks
  • ¼ cup pineapple juice
  • ¼ cup rice apple vinegar
  • ⅓ cup soy sauce
  • 1 ½ teaspoons sesame oil
  • 2 tablespoons avocado oil


Instructions

  1. Heat 1 tablespoon of avocado oil in a large pan or wok over medium-high heat. Cook the diced chicken until browned and cooked through, then remove and drain excess liquid.
  2. In the same pan, add another tablespoon of avocado oil and stir-fry the diced onion, red and yellow bell peppers, and broccoli until tender-crisp.
  3. In a bowl, whisk together the reserved pineapple juice, rice apple vinegar, soy sauce, sesame oil, and arrowroot powder until smooth.
  4. Return the chicken and pineapple to the pan with the vegetables. Pour the sauce over everything and stir well; cook until sauce thickens.
  5. Serve hot over cooked rice or noodles, garnished with sesame seeds.
