Description
This easy and healthy banana bread is naturally moist, lightly sweet, and made with no oil and minimal sugar. Despite being lower in calories, it still delivers a soft texture and rich banana flavor, making it perfect for a guilt-free breakfast or snack.
Ingredients
For the Base:
4 bananas (about 1 1/3 cups mashed / 320 g)
1 large egg
1 tablespoon vanilla extract (15 ml)
For Sweetness:
3 tablespoons light brown sugar (38 g)
2 tablespoons granulated sugar (25 g)
For Flavor & Texture:
1 teaspoon ground cinnamon (2.6 g)
1 teaspoon baking powder (4 g)
1 teaspoon baking soda (5 g)
1/2 teaspoon salt (2.5 g)
For Structure:
1 1/2 cups all-purpose flour (white or white whole wheat) (180 g)
For Moisture:
2 tablespoons unsalted butter, melted (or 30 g applesauce as substitute)
Instructions
- Preheat the oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, mash the bananas until smooth.
- Add the egg and vanilla extract, mixing until well combined.
- Stir in the brown sugar and granulated sugar until dissolved.
- Add the cinnamon, baking powder, baking soda, and salt, mixing well.
- Gradually add the flour, stirring until just combined.
- Mix in the melted butter (or applesauce) until the batter is smooth. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
