  • 1 teaspoon vegetable oil
  • 4 slices thick-cut turkey bacon (diced)
  • 3 pounds boneless chuck roast (cut into 1-inch pieces)
  • Salt and freshly ground pepper (to taste)
  • 2 large onions (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 2 ½ cups beef broth
  • 1 tablespoon brown sugar
  • 1 pound carrots (peeled and cut into 1-inch chunks)
  • 1 ½ pounds Yukon Gold potatoes (peeled and cut into 1-inch pieces)
  • Fresh parsley for garnish


Instructions

  1. Heat vegetable oil in a Dutch oven over medium-high heat. Add diced turkey bacon and cook until crispy. Remove and set aside.
  2. Season beef with salt and pepper, then brown in batches until all sides are golden. Remove from pot and set aside.
  3. Sauté onions in the same pot until browned, then add minced garlic.
  4. Stir in flour and tomato paste, cooking until darkened slightly. Pour in beef broth while scraping up browned bits.
  5. Add beef, turkey bacon, brown sugar, carrots, potatoes, salt, pepper, and thyme sprigs.
  6. Bring to a boil, cover, reduce heat to a simmer, and cook for about an hour.
  7. Check tenderness of beef after one hour; continue cooking until done if not tender.
  8. Optionally thicken the stew by increasing heat or adding a slurry of flour mixed with cold liquid if desired.
  9. Discard thyme sprigs before serving and garnish with fresh parsley.
