  • 1 cup quinoa
  • ¼ cup olive oil (divided)
  • ¼ cup lemon juice (divided)
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • Fresh parsley or cilantro, chopped


Instructions

  1. Marinate the Chicken: In a mixing bowl, combine ¼ cup olive oil, ¼ cup lemon juice, minced garlic, and seasonings. Add chicken breasts to the marinade and let sit for at least 15 minutes.
  2. Cook the Quinoa: Rinse quinoa under cold water. In a pot over medium heat, combine rinsed quinoa with 2 cups of water or broth and a pinch of salt. Bring to a boil then reduce heat; cover and simmer for about 15 minutes until liquid is absorbed.
  3. Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove chicken from marinade and grill for about 6–7 minutes per side until fully cooked (165°F internal temperature).
  4. Assemble the Bowls: Fluff cooked quinoa and divide among bowls. Top with grilled chicken slices and your choice of cherry tomatoes, cucumber, red bell pepper, herbs, and additional toppings as desired.
