  • 2 chicken breasts
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped fresh cilantro
  • 1 cup lettuce or mixed greens (optional)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp lemon juice
  • 2 tbsp olive oil (for dressing)
  • 1 tbsp fresh lime juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt & pepper to taste (for dressing)


Instructions

  1. Rub chicken breasts with olive oil, lemon juice, garlic powder, paprika, salt, and pepper.
  2. Grill chicken over medium heat for 5-6 minutes per side until cooked through. Let rest before slicing.
  3. Whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper in a bowl.
  4. In a large bowl, mix diced avocado, halved cherry tomatoes, chopped cilantro, and optional greens.
  5. Slice grilled chicken on top of the salad mixture and drizzle with dressing. Serve immediately.
