Ingredients
- 2 cups lukewarm water
- 2 teaspoons granulated sugar
- 1 and 1/2 teaspoons instant yeast
- 4 cups all-purpose flour
- 1 and 1/2 teaspoons salt
- 1/4 cup olive oil
- 14 oz feta cheese
- Optional: sesame seeds for topping
Instructions
- Make the starter by combining lukewarm water, sugar, yeast, and flour in a stand mixer bowl. Mix well and let sit for 8-10 minutes until foamy.
- In another bowl, whisk together remaining flour and salt. Add to the yeast mixture along with olive oil; knead on low speed for about 10 minutes until smooth.
- Place dough in an oiled bowl, cover with a towel or plastic wrap, and let rise until doubled in size (1.5 – 2 hours).
- Punch down the risen dough, flatten into a circle, fill one side with crumbled feta cheese, fold over, seal edges.
- Place on a baking tray lined with parchment paper; shape gently into a round loaf. Cover again and rest for 30 minutes while preheating oven to 425 °F (220 °C).
- Make indentations on top of the loaf; brush with melted butter mixed with cream and sprinkle sesame seeds if desired. Bake for 25-30 minutes until golden brown.
- Allow cooling for about 15 minutes before slicing.
