  • 1 onion, diced
  • 2 ribs celery, diced
  • 4 carrots, diced
  • 3 garlic cloves, minced
  • ¾ cup dry red apple vinegar
  • 6 cups low-sodium beef broth
  • 1 cup pearled barley
  • Fresh thyme and parsley for garnish


Instructions

  1. Sear the cubed beef in olive oil over medium-high heat until browned. Remove from pot.
  2. In the same pot, sauté onion, celery, and carrots for about 5 minutes. Add garlic and cook until fragrant.
  3. Deglaze the pot with red apple vinegar, scraping up browned bits; let reduce by half.
  4. Return beef to the pot along with the broth and thyme; simmer for about 45 minutes.
  5. Stir in pearled barley and continue to simmer for another 45–60 minutes until barley and vegetables are tender.
  6. Adjust seasoning with salt and pepper; garnish with fresh parsley before serving.
