Ingredients
- 600 g baby potatoes, halved
- 450 g chicken breast, cut into cubes
- 200 g mushrooms, sliced
- 1 red bell pepper, diced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 2 cloves garlic, minced
- 1 tsp dried Italian herbs
- 1 tsp paprika
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, toss the halved baby potatoes with olive oil, garlic powder, oregano, salt, and pepper. Spread them on a baking sheet.
- Roast the potatoes in the oven for 20-25 minutes until golden brown and crispy.
- While potatoes roast, heat olive oil in a skillet over medium-high heat.
- Season cubed chicken with salt, pepper, paprika, and Italian herbs. Cook until golden brown on all sides.
- Add minced garlic, sliced mushrooms, and diced bell pepper to the skillet; sauté for another 5-6 minutes until vegetables are tender.
- Serve the chicken garnished with fresh parsley alongside roasted potatoes.
