  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1½ tsp Cajun seasoning
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 12 oz rigatoni pasta
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 4 cloves garlic, minced
  • 1½ cups heavy cream
  • ½ cup whole milk
  • 1½ cups shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • ½ cup cubed Velveeta cheese
  • ¼ tsp salt
  • ½ tsp black pepper
  • ½ tsp Italian seasoning


Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the rigatoni and cook until just al dente as per package instructions.
  3. Drain the pasta and set aside.
  4. Pat the steak tips dry using paper towels.
  5. Season them evenly with Cajun seasoning, garlic powder, paprika, salt, and black pepper.
  6. Heat olive oil in a large skillet over medium-high heat.
  7. Add the seasoned steak tips in a single layer.
  8. Sear for 2–3 minutes on each side until they turn deeply golden with caramelized edges.
  9. Remove from skillet and set aside.
  10. Reduce heat to medium in the same skillet.
  11. Add butter and minced garlic; cook for about 30 seconds until fragrant.
  12. Return the seared steak tips to the skillet and toss until fully coated in garlic butter. Remove from heat and keep warm.
  13. In a separate large pan, melt butter with olive oil over medium heat.
  14. Add diced onion; cook until soft (about 3–4 minutes).
  15. Stir in minced garlic; cook briefly until fragrant.
  16. Pour in heavy cream and milk; simmer gently for about 3–4 minutes until slightly thickened.
  17. Reduce heat to low; add Velveeta cubes first, stirring until fully melted.
  18. Gradually add mozzarella and Parmesan cheese, stirring constantly until smooth and thick.
  19. Add cooked rigatoni into the cheese sauce; fold gently until every piece is smothered in cheese.
  20. Plate the cheesy rigatoni on one side of each plate.
  21. Place garlic butter steak tips on the other side.
  22. Spoon extra cheese sauce over pasta and drizzle remaining garlic butter over steak before serving.
