- 3 medium potatoes, peeled & cubed
- 2 tbsp butter
- 1 cup milk
- Salt & black pepper, to taste
- 10-12 medium shrimp, peeled & deveined
- 1 tsp olive oil
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 cup broccoli florets
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 tsp olive oil
- Pinch of salt & pepper
Instructions
- Boil potatoes in salted water until fork-tender (about 12-15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
- Heat olive oil in a skillet over medium heat. Add broccoli and diced peppers; season with salt and pepper. Sauté for 4-5 minutes until tender but still vibrant.
- In another skillet, melt butter with olive oil over medium heat. Sauté minced garlic for 30 seconds before adding shrimp, paprika, salt, and pepper. Cook for 2-3 minutes per side until pink.
- Assemble by placing mashed potatoes on one side of the plate and arranging shrimp and vegetables on the other.
