  • 3 medium potatoes, peeled & cubed
  • 2 tbsp butter
  • 1 cup milk
  • Salt & black pepper, to taste
  • 10-12 medium shrimp, peeled & deveined
  • 1 tsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 cup broccoli florets
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tsp olive oil
  • Pinch of salt & pepper


Instructions

  1. Boil potatoes in salted water until fork-tender (about 12-15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
  2. Heat olive oil in a skillet over medium heat. Add broccoli and diced peppers; season with salt and pepper. Sauté for 4-5 minutes until tender but still vibrant.
  3. In another skillet, melt butter with olive oil over medium heat. Sauté minced garlic for 30 seconds before adding shrimp, paprika, salt, and pepper. Cook for 2-3 minutes per side until pink.
  4. Assemble by placing mashed potatoes on one side of the plate and arranging shrimp and vegetables on the other.
