  • lbs boneless, skinless chicken breasts, cut into chunks
  • 12 oz rotini pasta
  • 1½ cups heavy cream
  • ¾ cup chicken broth
  • 8 oz Velveeta cheese, cubed
  • ¾ cup shredded mozzarella
  • ½ cup grated Parmesan
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1½ tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ¼ tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • Salt & black pepper, to taste
  • Chopped fresh or dried parsley


Instructions

  1. Cook rotini pasta in salted boiling water until al dente, drain and set aside.
  2. In a skillet, heat olive oil and butter; sauté seasoned chicken until golden brown.
  3. In the same skillet, sauté garlic in remaining butter, then add cream and broth to simmer.
  4. Stir in Velveeta until melted, then add mozzarella and Parmesan.
  5. Combine pasta and chicken into the sauce; serve hot garnished with parsley.
