Ingredients

  • 1 chicken breast, sliced
  • 1 cup cooked jasmine rice
  • 2 medium carrots, peeled and cut into sticks
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • Salt & pepper to taste


Instructions

  1. Preheat oven to 200C (400F). Toss carrot sticks with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  2. Prepare rice according to package instructions and keep warm.
  3. In a skillet over medium heat, melt butter. Add minced garlic and sauté until fragrant. Season chicken slices with salt and pepper; add to the skillet. Cook for about 5-7 minutes until golden brown.
  4. Assemble your bowl by placing warm rice as the base, topping it with sautéed chicken and roasted carrots. Garnish as desired.
