  • 1 cup chopped red bell pepper
  • 1 cup diced onion
  • 2 tbsp crumbled feta
  • 1 slice whole grain bread
  • 1 ripe avocado
  • Everything bagel seasoning (or salt, pepper, chili flakes)
  • ½ cup sliced strawberries
  • ½ cup blueberries


Instructions

  1. Preheat your oven to 375F (190C).
  2. In an oven-safe skillet, sauté zucchini, onion, and bell pepper in olive oil for about 3-4 minutes until softened.
  3. In a mixing bowl, whisk eggs with salt and pepper.
  4. Pour egg mixture over sautéed vegetables in the skillet and sprinkle with crumbled feta.
  5. Bake for 12-15 minutes until set; let cool slightly before slicing.
  6. Toast whole grain bread until golden brown; mash avocado and spread evenly on toast.
  7. Top toast with everything bagel seasoning or preferred toppings.
  8. Plate one slice of frittata alongside half of the avocado toast and garnish with fresh strawberries and blueberries.
