  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips


Instructions

  1. Preheat your oven to 160ºC (320ºF) or 170ºC (338ºF) for conventional heating and line a baking tray with parchment paper.
  2. Melt the chopped dark chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth and mix in the vanilla extract.
  3. In another bowl, whisk together the caster sugar, demerara sugar, and eggs until light and fluffy.
  4. Sift the flour, cocoa powder, baking powder, and salt into another bowl; fold in the chocolate chips.
  5. Gradually incorporate the melted chocolate mixture into the egg mixture, then gently fold in the dry ingredients until just combined.
  6. Scoop tablespoons of batter onto the prepared tray and bake for 12-14 minutes until set with a crackly surface.
  7. Allow to cool on the tray before transferring them to a wire rack.
