  • 3 lbs beef chuck, cut into 2-inch pieces
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 1 lb mushrooms, quartered
  • 2 tablespoons tomato paste
  • 3 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Prepare your ingredients by chopping the onion, carrots, and garlic; cut the beef into chunks.
  2. In a large pot over medium heat, heat olive oil. Season the beef with salt and pepper and brown in batches until fully cooked. Remove and set aside.
  3. In the same pot, sauté onions, carrots, and garlic until translucent.
  4. Sprinkle flour over the vegetables and stir well to coat them.
  5. Return the browned beef to the pot along with juices; stir in tomato paste and cover with beef broth.
  6. Bring to a boil, then reduce heat to low and simmer for about 2 hours.
  7. Heat additional olive oil in a separate pan; sauté mushrooms until golden brown before adding them to the stew in the last 30 minutes of cooking.
