  • 210 ml warm water (1 cup2 tbsp)
  • 1 tsp instant yeast
  • 1 tsp salt
  • 42.6 g butter (3 tbsp)
  • 32 g sugar (2 1/2 tbsp or to taste)
  • 80-90 g cranberries (1/2 cup)
  • 80-90 g raisins (1/2 cup)
  • 60-70 g currants (1/2 cup)
  • 1/2 tsp cinnamon powder
  • 1/4 tsp cardamom powder
  • optional nutmeg


Instructions

  1. In a mixing bowl, combine flour, salt, sugar, instant yeast, cinnamon, cardamom, and nutmeg.
  2. Add warm water and melted butter; stir until a sticky dough forms.
  3. Fold in cranberries, raisins, and currants until evenly distributed.
  4. Cover the bowl and let the dough rise in a warm spot for about 90 minutes or until doubled in size.
  5. Punch down the dough gently and shape it into a loaf on a floured surface.
  6. Place the loaf in a greased baking pan; cover it again and let it rise for another hour.
  7. Preheat your oven to 180°C (350°F).
  8. Bake for approximately 40 minutes or until golden brown; it should sound hollow when tapped on the bottom.
  9. Cool in the pan for five minutes before transferring to a wire rack.
