  • 1 can coconut milk (13.5 fl oz / 400ml)
  • 2-3 tablespoons red curry paste
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 large garlic clove
  • 1 small cube of ginger
  • 16-20 frozen dumplings (vegetable or any choice)
  • 2 bok choy bulbs
  • 1 zucchini (or any vegetable of choice)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large baking dish, whisk together coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil until smooth. Grate in garlic and ginger.
  3. Chop bok choy and slice zucchini; add to the baking dish and stir to coat.
  4. Place frozen dumplings on top without overlapping; press gently into the broth.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes until bubbling and slightly crispy.
