- 8 medium-large organic lemons (yellow part only)
- 4 cups high-proof alcohol alternative (fruit juice or vinegar)
- 4.6 cups water
- 2.43 lbs white sugar
Instructions
- Wash the lemons thoroughly and peel only the yellow skin using a vegetable peeler.
- Place the lemon peels in a large glass jar and cover them with high-proof alcohol alternative.
- Seal the jar and store it in a dark place for 25 days to infuse.
- After 25 days, strain the mixture through a fine mesh strainer into a large bowl.
- In a large pot, heat 4.6 cups of water until small bubbles form but do not boil.
- Add 2.43 lbs of sugar into the hot water and stir until dissolved.
- Allow the syrup to cool slightly, then mix it with the strained lemon-infused liquid while stirring continuously.
- Let the limoncello(alcohol free)
cool completely before bottling it in clean glass bottles.
