Ingredients

  • 1/2 cup softened butter
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 2 tsp Butter vanilla emulsion
  • 2 & 1/3 cups flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 package instant vanilla pudding mix (1.7 oz)
  • 1/2 cup milk
  • 4 oz whipped topping
  • 1 medium banana (roughly chopped)
  • Nilla wafers (for topping)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy. Beat in the egg and Butter vanilla emulsion.
  3. In another bowl, whisk flour, salt, and baking powder together. Gradually mix dry ingredients into the wet mixture until smooth.
  4. Line a baking sheet with parchment paper. Scoop tablespoon-sized portions of dough onto the sheet about 2 inches apart and bake for about 8 minutes or until edges are lightly golden.
  5. While cookies cool, prepare the topping by whisking instant vanilla pudding mix with milk until smooth; fold in whipped topping.
  6. Once cookies are cooled completely, spoon banana pudding topping onto each cookie; top with chopped bananas and finish with a Nilla wafer.
