Ingredients
- 1 lb. boneless, skinless chicken breasts/thighs
- 1 (4 oz.) can diced green chiles
- 2 cans (15 oz.) cannellini beans (drained)
- 2 cans (15 oz.) great northern beans (drained)
- 2 tbsp fresh cilantro (chopped)
- 2 tbsp lime juice
- 2 cups chicken broth
- 1 cup chopped onion
- 3 cloves minced garlic
- 1/2 tsp cumin
- 1/2 tsp oregano (dried)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp chili powder
- 8 oz. cream cheese (softened)
Instructions
- Prepare your ingredients by chopping the onion and mincing the garlic.
- In your slow cooker, combine diced green chiles, drained beans, chopped cilantro, lime juice, chicken broth, onion, garlic, cumin, oregano, salt, black pepper, and chili powder.
- Place the chicken on top of the mixture.
- Cover and cook on low for 7 hours or high for 4 hours until chicken is tender.
- Shred the chicken with two forks and mix back into the chili before serving.
