  • 1 lb. boneless, skinless chicken breasts/thighs
  • 1 (4 oz.) can diced green chiles
  • 2 cans (15 oz.) cannellini beans (drained)
  • 2 cans (15 oz.) great northern beans (drained)
  • 2 tbsp fresh cilantro (chopped)
  • 2 tbsp lime juice
  • 2 cups chicken broth
  • 1 cup chopped onion
  • 3 cloves minced garlic
  • 1/2 tsp cumin
  • 1/2 tsp oregano (dried)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder
  • 8 oz. cream cheese (softened)


Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In your slow cooker, combine diced green chiles, drained beans, chopped cilantro, lime juice, chicken broth, onion, garlic, cumin, oregano, salt, black pepper, and chili powder.
  3. Place the chicken on top of the mixture.
  4. Cover and cook on low for 7 hours or high for 4 hours until chicken is tender.
  5. Shred the chicken with two forks and mix back into the chili before serving.
