  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • ½ teaspoon red pepper flakes, optional
  • 1 tablespoon chopped parsley, optional, for garnish
  • ½ cup reserved pasta water, if needed


Instructions

  1. 1. Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and black pepper.
  2. 2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Sear the chicken until golden brown and cooked through; add Parmesan during the last minute to melt.
  3. 3. Cook linguine according to package instructions; reserve ½ cup pasta water before draining.
  4. 4. In the same skillet, melt remaining butter and sauté garlic until fragrant. Add heavy cream and Velveeta until smooth.
  5. 5. Stir in mozzarella and Parmesan until thickened; adjust consistency with reserved pasta water if needed.
  6. 6. Toss cooked linguine into the sauce until evenly coated and simmer for an additional two minutes.
  7. 7. Serve with seared chicken on top; garnish with chopped parsley if desired.
