  • 1 pound twisted pasta (rotini or fusilli)
  • 2 boneless, skinless chicken breasts, cut into cubes
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh chives


Instructions

  1. Cook the pasta according to package directions until al dente. Drain and set aside.
  2. Toss the chicken cubes with olive oil, Cajun seasoning, and paprika.
  3. Sauté the seasoned chicken in a skillet over medium-high heat until golden brown and cooked through; remove and set aside.
  4. In the same skillet, melt butter and sauté minced garlic until fragrant.
  5. Whisk in flour to create a roux; cook briefly.
  6. Gradually add milk and cream, stirring and simmering until thickened.
  7. Stir in cheeses until melted; season with salt and pepper.
  8. Combine cooked pasta and chicken into the sauce; mix well.
  9. Transfer to a serving dish, top with remaining cheese, then broil until bubbly.
