  • 16 oz full-fat cream cheese
  • 1 cup granulated sugar
  • 3 eggs
  • 12 tbsp unsalted butter
  • 3 cups cake flour
  • 1 1/4 cups buttermilk
  • 1/4 cup lemon juice
  • Zest from 2 lemons
  • 1/4 tsp salt
  • 3 tbsp all-purpose flour
  • 3/4 cup sour cream
  • 2 cups granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp lemon extract
  • Optional: zest of 1 lemon (about 1 1/2 tsp)
  • 6 to 6 1/2 cups powdered sugar
  • Yellow food gel, optional


Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. For the cheesecake layer, mix softened cream cheese with sugar and salt until smooth. Add eggs one at a time, then flour, sour cream, and lemon extract. Bake for about 65 minutes; cool completely.
  3. For the cake batter, cream butter and sugar until fluffy. Mix in eggs one at a time. Combine dry ingredients separately; alternate adding them with buttermilk, lemon juice, oil, and lemon extract.
  4. Divide batter into prepared pans and bake for 25-30 minutes until toothpick comes out clean. Cool in pans before transferring.
  5. Assemble by layering the cake with cheesecake in between and frost with cream cheese frosting.
