  • 3 large boneless skinless chicken breasts, sliced
  • 18 oz penne pasta
  • 1½ tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 2¼ teaspoons Cajun seasoning
  • 2¼ cups heavy cream
  • ¾ cup chicken broth
  • 6 oz Velveeta cheese, cubed
  • 3 oz cream cheese, softened
  • 1½ cups shredded mozzarella cheese
  • 1⅛ cups grated Parmesan cheese
  • Chopped parsley for garnish


Instructions

  1. Cook the penne in a large pot of salted water until al dente. Drain and set aside.
  2. Season chicken strips with Cajun seasoning, salt, and pepper. In a skillet, heat olive oil and half the butter over medium-high heat. Cook chicken for about 7-8 minutes until browned and cooked through. Transfer to a plate.
  3. Lower heat; melt remaining butter in the same skillet and sauté minced garlic for about 30 seconds. Add chicken broth and heavy cream; stir well and simmer gently.
  4. Stir in Velveeta and cream cheese until melted into a smooth sauce. Gradually add mozzarella and Parmesan cheeses until fully melted.
  5. Mix in Italian seasoning, then add cooked penne to the sauce mixture, tossing gently to coat.
  6. Serve with cooked chicken on top or folded into the pasta. Garnish with chopped parsley.
