  • 12 oz rigatoni pasta
  • 1 ½ lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 5 tbsp unsalted butter
  • Salt and freshly cracked black pepper, to taste
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp Italian seasoning
  • 5 cloves garlic, finely minced
  • 2 tbsp all-purpose flour
  • ¾ cup chicken broth
  • 1 ¾ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ cup shredded mozzarella cheese


Instructions

  1. Cook the rigatoni in boiling salted water until al dente; reserve some pasta water before draining.
  2. In a skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Sauté seasoned chicken until golden brown, then set aside.
  3. In the same skillet, melt remaining butter and cook the minced garlic. Stir in flour, then slowly add chicken broth and cream until smooth.
  4. Incorporate Parmesan and mozzarella until melted, then toss in cooked rigatoni and chicken to coat evenly.
  5. Let rest for a couple of minutes before serving.
