  • 1 small yellow onion (diced)
  • 1 jalapeno pepper (diced)
  • 3 cloves garlic (diced)
  • 1 tablespoon tomato paste
  • 15 oz. can corn (drained)
  • 10 oz. can diced tomatoes with green chilies (undrained)
  • 15 oz. can black beans (drained and rinsed)
  • 5 cups chicken broth
  • 2 small boneless skinless chicken breasts (or shredded chicken)
  • 1½ cups cheddar cheese (shredded)
  • ⅓ cup cream cheese (softened)


Instructions

  1. In a large pot, melt butter over medium heat. Sauté onions and jalapeno for about 5–6 minutes until softened; add garlic and cook for another minute.
  2. Stir in tomato paste, corn, diced tomatoes, black beans, chicken broth, and taco seasoning; bring to a gentle bubble.
  3. Add chicken to the pot; simmer gently for 20–25 minutes until cooked through.
  4. Shred the chicken with two forks and return it to the pot.
  5. Lower heat; gradually stir in cheddar and cream cheese until melted and creamy.
  6. Taste and adjust seasonings if needed before serving hot.
