- 300g rotini pasta
- 2 chicken breasts, diced
- 2 cups broccoli florets
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- Salt & pepper to taste
Instructions
- Cook the pasta: Boil salted water in a large pot. Add rotini pasta and cook according to package instructions. In the last three minutes of cooking, add broccoli florets. Drain and set aside.
- Sauté the chicken: In a large skillet, heat olive oil over medium heat. Add diced chicken breasts and cook until golden brown (5-7 minutes). Stir in minced garlic and cook for another minute.
- Make the sauce: Reduce heat and add heavy cream and chicken broth to the skillet. Stir in Parmesan cheese along with salt and pepper. Let simmer until slightly thickened.
