  • 1 lb boneless, skinless chicken breasts
  • 9 oz cheese tortellini
  • 1 cup heavy cream
  • 4 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 tablespoon garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Cook the tortellini according to package instructions in salted boiling water. Reserve ¼ cup pasta water before draining.
  2. Season chicken with Cajun and Italian seasoning; heat olive oil in a skillet and sear chicken until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté garlic until fragrant. Stir in heavy cream and Velveeta until melted, then add mozzarella and Parmesan.
  4. Combine tortellini with the sauce, adjusting thickness with reserved pasta water if needed. Return chicken to the skillet and simmer to warm through.
  5. Serve hot, garnished with fresh parsley if desired.
