  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup chicken stock
  • ½ cup heavy cream
  • Salt & pepper
  • 1 tbsp olive oil for frying
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 2 tbsp tomato paste
  • Fresh parsley, chopped


Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, chopped garlic, salt, and pepper. Mix until combined.
  2. Shape the mixture into small meatballs (about 1 inch in diameter).
  3. Heat olive oil in a skillet over medium heat. Cook meatballs until golden brown on all sides; set aside.
  4. In the same skillet, add onion and bell peppers; sauté until softened. Stir in minced garlic and smoked paprika.
  5. Pour in chicken stock and heavy cream; mix well with tomato paste and seasoning.
  6. Return meatballs to the skillet; cover and simmer for 10-12 minutes until cooked through.
  7. Serve with fresh parsley sprinkled on top.
