Ingredients
- 500g minced chicken
- 1 egg
- 1 cup breadcrumbs
- 2 tbsp milk
- 2 cloves garlic, finely chopped
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup chicken stock
- ½ cup heavy cream
- Salt & pepper
- 1 tbsp olive oil for frying
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 2 tbsp tomato paste
- Fresh parsley, chopped
Instructions
- In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, chopped garlic, salt, and pepper. Mix until combined.
- Shape the mixture into small meatballs (about 1 inch in diameter).
- Heat olive oil in a skillet over medium heat. Cook meatballs until golden brown on all sides; set aside.
- In the same skillet, add onion and bell peppers; sauté until softened. Stir in minced garlic and smoked paprika.
- Pour in chicken stock and heavy cream; mix well with tomato paste and seasoning.
- Return meatballs to the skillet; cover and simmer for 10-12 minutes until cooked through.
- Serve with fresh parsley sprinkled on top.
