  • 1 lb boneless skinless chicken breasts
  • 12 oz rotini pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • Cajun seasoning
  • Fresh parsley for garnish
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste


Instructions

  1. Cook rotini in salted water until al dente (9-11 minutes). Reserve 1 cup of pasta water, then drain.
  2. In a skillet, heat olive oil and 1 tbsp butter over medium-high heat. Sauté chicken strips seasoned with Cajun seasoning until golden (8-10 minutes).
  3. In the same skillet, melt remaining butter, sauté minced garlic for 1 minute, then add heavy cream and milk.
  4. Stir in Velveeta and mozzarella until melted; simmer for 3-5 minutes until thickened.
  5. Toss rotini into the sauce; add reserved pasta water as needed for consistency.
  6. For the Cajun drizzle, melt remaining butter with a pinch of Cajun seasoning.
  7. Serve pasta topped with chicken and drizzle with Cajun butter; garnish with parsley.
