- 1 large egg (or flax egg)
- 1 large egg yolk
- 1/4 cup unsalted butter (or dairy-free alternative)
- 4 cups all-purpose flour (or gluten-free flour mix)
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- a few drops blue gel food coloring (or alternatives like butterfly pea powder)
- 1/4 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 2 tablespoons ground cinnamon
- 1 cup crushed chocolate sandwich cookies (like Oreos)
- 1/2 cup mini chocolate chips
- 4 ounces cream cheese (softened)
- 1/4 cup unsalted butter
- 2 cups powdered sugar
- 1 cup crushed chocolate cookies
- extra mini chocolate chips (optional)
Instructions
- In a mixing bowl, combine warm milk and active dry yeast. Let sit until frothy.
- Add sugar, egg (or flax egg), melted butter, flour, salt, vanilla extract, and blue food coloring. Mix until combined.
- Knead dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and rise for about an hour.
- For the filling, mix softened butter with brown sugar and ground cinnamon; stir in crushed chocolate sandwich cookies and mini chocolate chips.
- Roll out dough into a rectangle about ¼ inch thick. Spread filling evenly over the dough.
- Starting from one long edge, roll up tightly into a log shape. Cut into equal pieces to form cinnamon rolls.
- Place rolls on a greased baking sheet. Let rise again for about 30 minutes before baking at 350°F (175°C) for about 25 minutes or until golden brown.
- For frosting, beat cream cheese with softened butter until creamy; gradually add powdered sugar and vanilla extract until smooth.
- Frost warm rolls once baked and cooled slightly.
