  • 3 cups cooked white rice (or brown rice)
  • 2 cups shredded cooked chicken (or turkey)
  • 1 can cream of chicken soup
  • 1 can French onion soup
  • 1 cup sour cream (or dairy-free yogurt)
  • 1 cup shredded cheese (Mozzarella or Swiss)
  • 1 cup French fried onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste black pepper
  • 1/4 cup chopped parsley for garnish


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Transfer half of the mixture into a greased casserole dish. Top with half the cheese and half the French fried onions.
  4. Layer on the remaining mixture followed by the rest of the cheese and fried onions.
  5. Bake uncovered for 35 minutes until bubbly and golden brown. Allow to cool slightly before serving.
