  • 2.5 lbs beef chuck, cut into large chunks
  • 2 tablespoons coconut oil
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 tablespoon brown sugar
  • Salt & black pepper to taste


Instructions

  1. Heat coconut oil in a Dutch oven over medium heat. Sauté the sliced onion until translucent. Add minced garlic and grated ginger, cooking until fragrant.
  2. Increase heat to medium-high and add beef chunks, browning them on all sides. Season with salt and black pepper.
  3. Stir in red curry paste, ground cumin, cinnamon, turmeric, and optional chili flakes until meat is well coated.
  4. Pour in coconut milk and beef broth; add brown sugar and stir until combined.
  5. Bring to a gentle boil, reduce heat to low, cover, and simmer for 2–3 hours until the beef is tender.
  6. Adjust seasoning as needed before serving hot over jasmine rice.
