  • 2 Green Onions
  • 1 Tablespoon Oil
  • 1 Tablespoon Ginger + Garlic (combined)
  • 1 Star Anise
  • 1 Bay Leaf
  • 1 Cinnamon Stick
  • 5 cups Broth (or Stock)
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Rice Vinegar
  • Juice of one Lime


Instructions

  1. Rinse the bok choy thoroughly, separate the leaves, and slice them.
  2. Slice green onions, keeping bulbs and stalks separate.
  3. In a large pan, heat oil and sauté green onion bulbs until soft.
  4. Add ginger-garlic mixture carefully to avoid splatter.
  5. Stir in bok choy for about one minute.
  6. Add star anise, bay leaf, and cinnamon stick for flavor.
  7. Pour broth over ingredients; season with soy sauce and rice vinegar.
  8. Bring to a boil; simmer for 8–10 minutes while stirring occasionally.
  9. Remove from heat; add lime juice and discard whole spices before serving.
