  • 3 overripe mashed bananas
  • 4 tablespoons melted vegan butter
  • ¾ cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 teaspoon vanilla extract
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons cinnamon
  • ¼ teaspoon salt
  • 1½ cups all-purpose flour (regular or gluten-free)
  • 1 cup old-fashioned rolled oats
  • ⅓ cup light brown sugar
  • ¾ cup powdered sugar
  • 2 oz softened vegan cream cheese


Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a loaf pan.
  2. In a large bowl, mix together the mashed bananas, melted vegan butter, maple syrup, almond or oat milk, and vanilla until well blended.
  3. Add baking powder, baking soda, cinnamon, flour, and oats to the wet mixture; stir gently until just combined.
  4. Pour half of the batter into the prepared loaf pan. In a separate bowl, combine melted vegan butter, brown sugar, and cinnamon for the swirl mixture; spread half over the batter.
  5. Layer the remaining batter on top and finish with the rest of the cinnamon mixture.
  6. Bake for 50-60 minutes until a toothpick comes out clean. Allow to cool before frosting with a mix of powdered sugar, melted vegan butter, and softened vegan cream cheese.
