  • 16 ladyfingers (savoiardi)
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Cocoa powder for dusting


Instructions

  1. Prepare the cherries by combining them with sugar and cherry juice; let sit for 15 minutes.
  2. Brew strong coffee and allow it to cool completely.
  3. Whip heavy cream until stiff peaks form; set aside.
  4. In another bowl, mix mascarpone cheese with powdered sugar and vanilla until smooth.
  5. Gently fold whipped cream into the mascarpone mixture.
  6. Dip ladyfingers quickly in coffee; layer half in a rectangular dish followed by half of the mascarpone mix and half of the cherries.
  7. Repeat layers with remaining ingredients.
  8. Cover and refrigerate for at least 4 hours or overnight.
