  • 1/2 teaspoon fine sea salt

  • 4 ounces cream cheese, at room temperature
  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate melting wafers (optional)


Instructions

  1. Prepare the cherries by draining and chopping them into bite-sized pieces. Pat dry with paper towels.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a stand mixer, cream together butter and cream cheese until fluffy. Gradually add sugar until pale and airy. Mix in egg, vanilla extract, almond extract, and reserved cherry juice.
  4. Combine dry ingredients with wet mixture on low speed until just combined. Gently fold in chopped cherries.
  5. Chill dough for at least one hour.
  6. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  7. Scoop dough onto the prepared sheet and bake for about 10 minutes or until edges turn golden. Cool on wire rack.
  8. If desired, melt white chocolate and drizzle over cooled cookies.
