  • 2 tbsp unsalted butter

  • 1 tsp garlic powder
  • Salt and freshly ground black pepper

Instructions

  1. Boil rotini in salted water until al dente (about 8–10 minutes). Reserve 2 tablespoons of pasta water, then drain.
  2. Season chicken strips with Cajun seasoning, garlic powder, salt, and pepper.
  3. In a skillet, heat olive oil and 1 tablespoon butter over medium-high heat; sear chicken strips until golden brown (3–4 minutes per side).
  4. Reduce heat; add remaining butter and minced garlic to the skillet until fragrant.
  5. Stir in heavy cream and milk; bring to a gentle simmer.
  6. Add Velveeta cubes, stirring until melted. Incorporate mozzarella and Parmesan cheese until creamy.
  7. Toss cooked rotini in the sauce until well coated. Serve topped with chicken strips and garnish with parsley.
