Ingredients
- 1 lb boneless, skinless chicken breasts
- 12 oz rotini pasta
- 8 oz Velveeta cheese
- 4 oz cream cheese
- 3 cups whole milk
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and black pepper, to taste
Instructions
- Cook rotini in salted boiling water until al dente (9-10 minutes). Reserve ½ cup pasta water, drain, and set aside.
- Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
- In a skillet over medium-high heat with olive oil, sauté seasoned chicken for 6-8 minutes until golden brown. Remove and set aside.
- In the same skillet, melt butter and sauté minced garlic for 1 minute. Whisk in flour to form a roux.
- Gradually add milk while whisking until thickened (3-5 minutes). Stir in Velveeta and cream cheese until melted.
- Mix in mozzarella and Parmesan until smooth; season with salt and pepper.
- Combine cooked rotini and chicken in the sauce; toss well to coat.
