  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 8 oz Velveeta cheese
  • 4 oz cream cheese
  • 3 cups whole milk
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste


Instructions

  1. Cook rotini in salted boiling water until al dente (9-10 minutes). Reserve ½ cup pasta water, drain, and set aside.
  2. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. In a skillet over medium-high heat with olive oil, sauté seasoned chicken for 6-8 minutes until golden brown. Remove and set aside.
  4. In the same skillet, melt butter and sauté minced garlic for 1 minute. Whisk in flour to form a roux.
  5. Gradually add milk while whisking until thickened (3-5 minutes). Stir in Velveeta and cream cheese until melted.
  6. Mix in mozzarella and Parmesan until smooth; season with salt and pepper.
  7. Combine cooked rotini and chicken in the sauce; toss well to coat.
