  • 1 cup all-purpose flour (120g)
  • 1 teaspoon salt
  • 1 tablespoon hot water, plus more if needed
  • 2 (8-ounce/227g) blocks cream cheese, room temperature
  • ½ cup granulated sugar (100g)
  • 1 pinch salt
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract


Instructions

  1. Preheat oven to 350°F. Grease a 9-inch square baking pan and line with parchment paper.
  2. Melt butter and 1 cup of chocolate chips in a microwave-safe bowl in 20-second intervals, stirring until smooth. Whisk in cocoa powder, sugars, eggs, brewed coffee, and vanilla.
  3. Stir in flour and salt until just combined; reserve ½ cup of the batter.
  4. Pour remaining batter into the prepared pan and bake for 20–30 minutes based on desired texture.
  5. Beat cream cheese, sugar, salt, eggs, and vanilla until smooth; pour over warm brownie base.
  6. Swirl reserved brownie batter over cheesecake layer.
  7. Bake for an additional 30–35 minutes or until edges are puffed.
  8. Cool completely before refrigerating for at least one hour before slicing.
