11 oz soft caramels
1 tbsp heavy whipping cream
10 oz chocolate melting wafers (8 oz works fine)
8 oz cashews
Sea salt, optional
Instructions
- Line a baking sheet with parchment or wax paper. Spread the cashews evenly across the surface.
- In a microwave-safe bowl, combine caramels and heavy cream. Heat in 30-second intervals, stirring between each, until smooth and melted.
- Spoon small portions of the melted caramel over clusters of cashews, gently nudging them together. Let cool slightly to firm up.
- Melt the chocolate wafers in a microwave-safe bowl in short intervals, stirring until smooth.
- Spoon or drizzle melted chocolate over each caramel-cashew cluster to coat.
- Sprinkle with sea salt if desired.
- Allow clusters to set completely at room temperature or refrigerate until firm.
