Description

These sweet and salty cashew clusters combine buttery caramel, smooth melted chocolate, and crunchy roasted cashews for an irresistible no-fuss treat. They’re perfect for gifting, holiday trays, or satisfying a quick dessert craving.

 


Ingredients

For the Cashew Clusters:
11 oz soft caramels
1 tbsp heavy whipping cream
10 oz chocolate melting wafers (8 oz works fine)
8 oz cashews
Sea salt, optional


Instructions

  • Line a baking sheet with parchment or wax paper. Spread the cashews evenly across the surface.
  • In a microwave-safe bowl, combine caramels and heavy cream. Heat in 30-second intervals, stirring between each, until smooth and melted.
  • Spoon small portions of the melted caramel over clusters of cashews, gently nudging them together. Let cool slightly to firm up.
  • Melt the chocolate wafers in a microwave-safe bowl in short intervals, stirring until smooth.
  • Spoon or drizzle melted chocolate over each caramel-cashew cluster to coat.
  • Sprinkle with sea salt if desired.
  • Allow clusters to set completely at room temperature or refrigerate until firm.
