Instructions

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
  2. Whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt in a bowl.
  3. In another bowl, beat eggs and sugars until thick and creamy. Add vanilla and mix well.
  4. Gradually combine dry ingredients with wet mixture; fold in grated carrots.
