  • 1 tbsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder (adjust to taste)
  • 1 tsp crushed fresh coriander seeds (or 1 tbsp finely chopped fresh cilantro leaves)


Instructions

  1. Heat the vegetable oil and butter in a large skillet over medium heat. Sauté the chopped onion until translucent (about 5-7 minutes), then add minced garlic and grated ginger.
  2. Add the chicken thighs to the skillet and cook until browned on all sides (about 8-10 minutes).
  3. Stir in ground coriander, garam masala, turmeric, and chili powder; cook for an additional 2-3 minutes.
  4. Pour in enough water or broth to cover the chicken partially (about 1 cup). Bring to a simmer, reduce heat to low, cover, and cook for 20-25 minutes until tender.
  5. Before serving, stir in crushed fresh coriander seeds or chopped cilantro leaves.
