  • 20 saltine crackers
  • 1 cup unsalted butter (cubed)
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup light brown sugar (packed)
  • 1/3 cup granulated sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • Sea salt (optional)


Instructions

  1. Preheat oven to 425°F and line a 9×13-inch baking dish with parchment paper. Arrange saltine crackers in a single layer.
  2. In a medium saucepan, melt butter and brown sugar over medium heat until boiling. Let boil without stirring for 4-5 minutes. Pour over crackers and bake for 4-5 minutes until bubbly.
  3. Remove from oven, sprinkle chocolate chips on top, and spread once melted. Cool in freezer.
  4. Brown the remaining butter in a saucepan over medium heat until golden brown. Allow to cool slightly.
  5. Whisk together flour and baking soda in one bowl; combine sugars and cooled butter in another. Mix wet ingredients into dry ingredients until just combined.
  6. Fold in the cooled toffee pieces and chill dough for at least two hours.
  7. Preheat oven again to 350°F and bake scooped dough for 8-10 minutes until edges are golden.
