  • 23 tbsp milk (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch or Bundt pan.
  2. In a blender, combine chopped raw carrots, eggs, and vegetable oil until smooth.
  3. Add white sugar to the mixture and pulse until well combined.
  4. In a large bowl, whisk together all-purpose flour, baking powder, and salt.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined; avoid overmixing.
  6. Pour the batter into the prepared pan and bake for about 30–40 minutes or until a toothpick inserted comes out clean.
  7. Allow the cake to cool in the pan for about 15 minutes before glazing.
  8. For the glaze, melt chocolate chips (or cocoa powder), butter, and corn syrup over a double boiler; add milk gradually if needed to reach desired consistency.
  9. Pour the glaze over warm cake and let it set before slicing.
