- 6 tbsp unsalted butter (or coconut oil)
- 1 tsp vanilla extract
- 1 cup blueberries (fresh or frozen)
- ¼ cup granulated sugar
- 2 tsp cornstarch
Instructions
- Preheat your oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
- In a large bowl, mix oats, flour, brown sugar, baking soda, salt, and cinnamon until combined.
- Stir in melted butter and vanilla extract; mix until crumbly.
- Press half of the oat mixture into the lined pan as the base layer.
- In another bowl, toss blueberries with granulated sugar and cornstarch; spread over the oat base.
- Crumble remaining oat mixture on top of blueberries and gently press down.
- Bake for 35-40 minutes until golden brown and bubbly.
- Cool completely in the pan before lifting out and cutting into squares.
