  • ¾ cup all-purpose flour (or gluten-free flour blend)
  • ⅓ cup light brown sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon (optional)
  • 6 tbsp unsalted butter (or coconut oil)
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • ¼ cup granulated sugar
  • 2 tsp cornstarch


Instructions

  1. Preheat your oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, mix oats, flour, brown sugar, baking soda, salt, and cinnamon until combined.
  3. Stir in melted butter and vanilla extract; mix until crumbly.
  4. Press half of the oat mixture into the lined pan as the base layer.
  5. In another bowl, toss blueberries with granulated sugar and cornstarch; spread over the oat base.
  6. Crumble remaining oat mixture on top of blueberries and gently press down.
  7. Bake for 35-40 minutes until golden brown and bubbly.
  8. Cool completely in the pan before lifting out and cutting into squares.
