- 1 tbsp lemon juice
- 1 tsp cornstarch mixed with 1 tbsp water
- 1 cup heavy cream
- 1 cup dark chocolate chips
- 1 tsp dried culinary lavender
- 1 tbsp unsalted butter

Instructions
- Preheat oven to 350°F (175°C) and prepare three 9-inch cake pans.
- In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, combine sugar and vegetable oil; add eggs one at a time and stir in vanilla extract.
- Infuse buttermilk with ground lavender for 5 minutes.
- Gradually mix dry ingredients with wet ingredients and alternate with infused buttermilk; stir in cooled coffee until smooth.
- Divide batter among prepared pans and bake for 30–35 minutes or until a toothpick comes out clean. Cool completely.
- Prepare blueberry compote by cooking blueberries, sugar, and lemon juice until thickened.
- Make lavender chocolate ganache by steeping heavy cream with dried lavender; strain and mix with chocolate chips until smooth.
