Berry Custard Puff Pastry

This elegant berry custard puff pastry features a flaky, golden crust filled with a smooth and creamy vanilla custard, then topped with fresh berries and sliced almonds. Lightly dusted with powdered sugar, it’s a beautiful dessert that’s perfect for gatherings or a special treat.

Ingredients

For the Puff Pastry:
1 large rectangular puff pastry sheet (13 oz / 375 g)

For the Custard Filling:
2 cups (475 ml) milk
1/2 cup (100 g) sugar
1/3 cup (50 g) cornstarch
4 large egg yolks
1 teaspoon vanilla extract

For the Topping:
Fresh blueberries and raspberries
Sliced almonds
Powdered sugar
1 tablespoon milk or 1 egg yolk (for brushing)


Instructions

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Roll out the puff pastry sheet slightly and place it on the prepared baking sheet. Score a small border around the edges without cutting all the way through.

Brush the edges with milk or egg yolk to help create a golden crust.

Bake the puff pastry for 12–15 minutes, or until lightly golden and puffed. Remove from the oven and let cool slightly.

In a saucepan, whisk together the milk, sugar, and cornstarch until smooth.

Add the egg yolks and continue whisking until fully combined.

Cook over medium heat, stirring constantly, until the mixture thickens into a custard consistency.

Remove from heat and stir in the vanilla extract. Let the custard cool slightly.

Gently press down the center of the baked pastry to create space for the filling.

Spread the custard evenly over the center of the pastry.

Arrange blueberries and raspberries on top, then sprinkle with sliced almonds.

Dust with powdered sugar before serving.
